We handpick the grapes in our 12-hectare limited production vineyard. At night, we cool the grapes to 4ºC before crushing and covering them for maceration prior to pressing. The fermentation, at a maximum controlled temperature of 19ºC, and its subsequent aging on the lees gives this wine a powerful aromatic load.
The first white from Albillo de la Ribera del Duero.
Very light straw color, due to resistance to oxidative processes. Fruity aroma with a background of pineapple and grapefruit, original and typical of the Albillo variety. Balanced on the palate, it compensates for the corpulence with a slight acidity.
